Meatless Monday Tacos

There are many benefits of going meatless. I’m not saying that everyone should become a vegetarian, but once a week it could be a good idea to eat a few meatless meals for the day. A few of the benefits of going meatless include: limiting your cancer risk, reducing heart disease, and fighting diabetes. For more information on the benefits of going meatless check out:


Here’s a great meatless Monday recipe. Trust me you won’t even know what you’re missing!

Meatless Monday Tacos


-2 cups cooked quinoa
-3 tbsp olive oil
-4 cloves of garlic
-Half a yellow onion
-Can of low sodium black beans; drained
-Can of corn; drained
-Can of chipotle peppers in adobo sauce
-Taco seasoning- packaged or homemade: see bottom
-Sea salt


Cook your quinoa according to the instructions. In a frying pan, combine minced garlic, chopped onion, quinoa, beans, and corn. Mix together, and then add in the adobo sauce. I also Like to add a few of the chipotle peppers for taste, but not too many as to overpower the flavor.  Next, stir in the taco seasoning and a dash of sea salt. Make sure to mix all ingredients well and let cook over medium heat for about 10 minutes.

Lastly, I like to use whole-wheat tortillas, avocado, lettuce, low-fat Mexican cheese and plain Greek yogurt on top.

Homemade Taco Seasoning

Mix together paprika, chili powder, onion powder, garlic powder, salt, pepper, and a small dash of cayenne
